You can't go wrong with chocolate cakes! Check out this simple and quick recipe that will fill tummies in no time!


  • 225g plain flour
  • 350g golden caster sugar
  • 85g cocoa powder
  • 1 1/2 tsp bicarb
  • 1 1/2 tsp baking powder
  • 2 eggs
  • 250 ml milk
  • 250 ml boiling water
  • 120 ml vegetable oil
  • --------- For the chocolate butter-cream icing ---------
  • 50g milk chocolate
  • 125g butter
  • 250g icing sugar
  • 1 tsp milk
  • 1 tsp boiling water


  1. Preheat the oven to 180c
  2. In a large bowl or the bowl of a stand mixer, mix together all of the dry ingredients, then beat in the eggs, milk and oil. once beaten together, add the boiling water. Your batter will be very liquid.
  3. Set out 24 muffin cases and pour the liquid batter into the cases until they are about 2/3 full.
  4. Bake for approx 12-16 minutes until risen and the cakes spring back when touched.
  5. Allow to cool before icing.
