The other night , when I got in late from work , I remembered that my daughter Billie was having a friend over the next day. In a fit of panic and trying to be a good mummy I thought I should make a nice treat for the girls that wouldn’t take much time. I had some chocolate and decided to make fridge cake, a favourite when I was growing up. I didn’t even bother to measure out anything but the chocolate and butter, and just added handfuls of broken biscuits , rice krispies and sour cherries to the melted chocolate, butter and syrup. The next day when the girls came back from school and I had been at work, I could at least whip out homemade frozen bolognaise sauce and fridge cake for pudding! The girls were happy and I felt a little bit better about being a working mum, juggling a pretty hectic but pretty fun life. Below is the recipe for fridge cake, so easy and a good one to make with the kids too!
Ingredients - Serves 6-8
- 150g digestive biscuits
- 110g salted butter
- 55g dark chocolate
- 55g milk chocolate
- 30g sour cherries
- 15g rice krispies
- 2tbsp golden syrup
Method
- In a Bain Marie, melt the chocolate, butter and syrup together.
- Smash the biscuits a little and chop the cherries then combine all the ingredients together in a bowl.
- Line a loaf tin with cling film and press the mixture into it. Set in the fridge for a few hours.
